Survivor Celebration - Inspiring and Empowering Cancer Survivors

Here is a yummy dinner that is so alkaline and full of goodness you will be wanting it weekly :)


Lentil Stew
225g brown lentils (soaked for about 20 minutes)
2 onions peeled and chopped
1 vegetable stock cube
4 carrots, trimmed, peeled and chopped
Half a butternut or pumpkin (butternut is best) peeled and chopped
1 kumara peeled and diced
4 small potatoes chopped with skin on
1 celery stalk trimmed and chopped
50g garden peas
100 g watercress or silver beet
2 tbsp dill
1 tsp tamari sauce

Place the onions and vegetable stock cube in a saucepan with 750ml water and bring to the boil. Add the lentils, carrots, squash, kumara and potatoes. Bring back to the boil, then lower the heat and simmer for 10 minutes. Add the celery and simmer for a further 5 minutes. Add the peas, watercress, dill and tamari and serve.

I just made a lentil soup this past week! Now I am writing down your ingredients! Sounds wonderful, expecially with winter coming on. But I love stews anytime:)
